- 1 cup cup canned chickpeas
- 1 egg
- 2 tbsps tbsps flour
- 1/2 onion
- to taste chopped parsley
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
- to taste breadcrumbs

To prepare the chickpea patties, the first thing to do is open the can of chickpeas, drain them in a strainer, place them in a bowl, add the egg, and blend everything with a immersion blender.
You should obtain a smooth and compact mixture.
Add the chopped onion, parsley, and mix well.
Now add the pepper, salt, and flour, mix.
With your hands, take a walnut-sized piece of dough and shape it into patties, roll them in breadcrumbs, place them on a greased baking tray, and brush the patties with a little extra virgin olive oil.
Bake the patties in a preheated oven at 350°F for 20-25 minutes.
Serve the chickpea patties either hot or cold accompanied by salad or cooked vegetables of your choice
