Cookie Cake is a no-bake cake that’s really delicious, very soft, and full of chocolate. Perfect as a dessert at the end of a meal or for the children’s snack
To prepare it, you only need a few simple ingredients that we already have in the pantry. Cookie Cake is made in just a few minutes, requires no baking, and is without butter and eggs, making it suitable for those with intolerances. A last-minute dessert, its consistency and taste are similar to the famous chocolate salami. To prepare the cake, just roughly crumble the cookies and then mix them with the melted chocolate; once you get a uniform mixture, pour it into a mold and compact it well with the back of a spoon. Two hours of rest in the fridge, and the final result will reward the wait.

- 2 tbsp sugar
- 0.75 oz unsweetened cocoa powder

Let’s start preparing
Let’s start making the cookie cake: in a large bowl, crumble the cookies with your hands.
Chop the chocolate roughly, and gently melt it using a double boiler.
Add the sugar and cocoa to the cookies, mix, and also add the melted chocolateMix to combine everything and distribute the chocolate well.
Line an 8-inch baking pan with parchment paper, pour the cookie mixture into it, and distribute it well.
Compact the mixture well by using the back of a spoonLet it rest in the fridge for at least two hours.
After resting in the fridge, unmold and serve!
