These are zucchini sticks seasoned with breadcrumbs and flavored with herbs, finally cooked in an air fryer or oven with very little oil, making them tasty yet light. Few ingredients and few steps for a recipe that’s often repeated at my house, a way to get my kids to eat zucchini.

- 4 zucchini
- extra virgin olive oil
- 3 tablespoons breadcrumbs
- salt
- pepper
- oregano

Steps
Let’s start preparing
Let’s start preparing Crispy Zucchini Sticks, wash and trim the zucchini. Then cut them in half and slice each half into several sticks about half a cm thick. Place them in a large bowl to contain them with extra virgin olive oil.
Now add to the bowl the breadcrumbs, salt, pepper, oregano, and mix until they are evenly breaded; then add the extra virgin olive oil.
Take the basket of the air fryer, place a sheet of parchment paper on the bottom, and arrange the zucchini sticks on top, distributing them well.
Cook at 355°F (180°C) for 12 minutes, (for oven cooking 355-375°F (180-190°C) for 15-20 minutes.) shaking the basket halfway through cooking to ensure even browning of the zucchini.
Once ready, place our crispy zucchini on a serving plate and let’s enjoy them nice and hot
