  • 1.1 lb spring onions
  • 4 eggs
  • 4 tomatoes
  • 2/3 cup water
  • extra virgin olive oil
  • salt

Steps

Let’s start preparing

  • Let’s start preparing the eggs with spring onions; wash and thinly slice your spring onions and place them in a frying pan with extra virgin olive oil and the tomatoes cut into pieces.

    Let everything brown for a few minutes, then add the water and cook the onions until done.

    When the onions are cooked, gently crack the eggs, taking care not to break them, and season with salt.

Cover with a lid and let cook for a total of 5-6 minutes. The cooking time for the eggs varies according to your taste. If you prefer a firmer egg, extend the cooking by a few minutes, but do not exceed 10 minutes.
