Frittata with Broccoli Rabe, a tasty vegetarian second course, excellent paired with a side of raw salad.

Broccoli rabe have important detoxifying properties to free our body from toxins, are rich in vitamins (A, C, K, folates), minerals (iron, calcium, potassium, magnesium) and fiber, offering benefits such as antioxidant action, immune system support, digestion improvement, intestinal regularity, diuretic and purifying properties, and support for cardiovascular and bone health.

Ingredients

LET’S SEE TOGETHER WHAT WE NEED TO PREPARE

  • 18 oz broccoli rabe
  • 6 eggs
  • 1/2 cup cheese (grated)
  • salt
  • pepper
  • extra virgin olive oil
  • 3 tbsps seltzer

Steps

Let’s start preparing

  • Let’s start preparing the frittata with broccoli rabe, clean the broccoli rabe well, remove the damaged outer leaves and the large stems that can remain hard during cooking.
    Wash them well under water and blanch for 5 minutes in salted boiling water. Drain them and immediately run under cold water to set the chlorophyll. Squeeze them well and chop them a bit with a knife.

  • Break the eggs in the bowl with the broccoli rabe and add the milk, grated cheese, salt, and a grind of pepper and mix.

    Pour a drizzle of extra virgin olive oil into a pan, let it heat well, and then pour the egg and broccoli rabe mixture. Let the frittata cook over moderate heat until the base sets. Cover with a lid to solidify the top better.
    Then, using a flat plate, flip it and continue cooking for another minute.

    Now remove the pan from the heat, pour the Frittata with Broccoli Rabe onto the serving plate. Here is our frittata ready to be served.
