Frittata with rapini, a tasty vegetarian main course, excellent when paired with a side of fresh salad.
The rapini (broccoli rabe) have important detoxifying properties to help free our body from toxins; they are rich in vitamins (A, C, K, folate), minerals (iron, calcium, potassium, magnesium) and fiber, offering benefits such as antioxidant action, immune system support, improved digestion and intestinal regularity, diuretic and cleansing properties, and support for cardiovascular and bone health.

Ingredients
LET’S SEE WHAT WE NEED TO PREPARE
- 18 oz rapini (broccoli rabe) (about 1.1 lb)
- 6 eggs
- 2 oz cheese (grated, about 1/2 cup)
- salt
- pepper
- extra virgin olive oil
- 3 tbsp sparkling water (about 1.35 fl oz)

Let’s start preparing
Let’s start preparing the frittata with rapini. Clean the rapini well: remove damaged outer leaves and any stems that are too thick and could remain tough during cooking.
Wash them well under running water and blanch them for 5 minutes in salted boiling water. Drain them and immediately pass them under cold water to fix the chlorophyll. Squeeze them well and chop them a little with a knife.
Break the eggs into the bowl with the rapini and add the milk, the grated cheese, salt and a grind of pepper, then mix.
Pour a drizzle of extra virgin olive oil into a pan, heat it well and then pour in the egg and rapini mixture. Let the frittata cook over moderate heat until the base firms up. Cover with a lid to help the top set.
Then, using a flat plate, flip it and continue cooking for another minute.
Now remove the pan from the heat, transfer the Frittata with rapini to a serving plate. Here is our frittata ready to serve.
