  • Let’s start preparing the grattini: pour the durum wheat semolina into a bowl and add a pinch of salt, the eggs, and start kneading.

    When all the flour is well combined, continue working the dough on a floured board until it is smooth and elastic.
    Shape into a dough ball and place it in the fridge wrapped in plastic wrap for 10 minutes.

    After this time, take the dough out of the fridge and using a large-hole grater, grate the dough and arrange the grattini on a tray, dusting them with a little flour.
    Let them dry for at least one hour and proceed to cooking.
