- 1/2 cup lemon juice (about 125 ml)
- 1/2 cup orange juice (about 125 ml)
- 6 tbsp + 1 tsp granulated sugar (about 80 g)
- 1/4 cup (4 tbsp) potato starch (about 30 g)

Let’s start preparing the lemon cream: using a citrus juicer and a measuring jug, extract 1/2 cup of lemon juice. Then squeeze 1/2 cup of orange juice and pour this into the jug as well.
Put the sugar and the potato starch into a small saucepan and mix well with a whisk.
Slowly pour in the lemon and orange juices a little at a time, stirring again to combine everything and obtain a smooth, lump-free mixture.
Place the saucepan on the heat and, continuing to stir, let the cream thicken. It will take about 5 minutes.
