LEMON PESTO, a delightful sauce that is prepared very quickly

It is a preparation similar to basil pesto, sharing some ingredients like pine nuts, parmesan, and basil. To obtain the pesto, simply add the juice and zest of lemons, which give it its characteristic flavor. Once ready, you can use it to dress pasta or make delicious bruschetta.

Ingredients

LET’S SEE WHAT WE NEED TO PREPARE

  • 2 lemons (untreated)
  • 1.75 oz pine nuts
  • 2 oz grated parmesan
  • 1 clove garlic
  • 8 leaves basil
  • 5 tbsp extra virgin olive oil
  • 1 pinch pepper (optional)

  • 1 Food Processor
  • 1 Kitchen Scale
  • Spatula

Steps

Let’s start preparing

  • Let’s start preparing the lemon pesto. Wash the lemons very well and dry them.

    Cut the peel from the lemon, avoiding the white part as it is bitter

    Squeeze the juice of both lemons and strain it to remove the seeds

  • Place the zest of the lemon in the food processor cup, add the juice, pine nuts, pepper, basil, and garlic clove.

    Add the parmesan and pour in half the amount of extra virgin olive oil. Start blending, continue adding extra virgin olive oil gradually while blending until you get a smooth cream.
