Ingredients

  • 6 oz pasta
  • 1 onion
  • 3 oz pancetta
  • 1 chili pepper
  • basil
  • chopped parsley
  • pecorino (grated)
  • extra virgin olive oil
  • salt
  • 1 clove garlic

Steps

Let’s start preparing the

  • Let’s begin preparing Molisana-style pasta: put a pot full of water on the stove for cooking the pasta.
    In the meantime, prepare the sauce.

    Heat a drizzle of extra virgin olive oil in a pan and sauté the finely chopped onion and garlic. Add the diced pancetta, the parsley, the basil and the crushed chili pepper. Let cook for a few minutes.

  • Cook the pasta in plenty of salted water, drain it al dente and toss it in the pan with the sauce and the grated pecorino. Mix everything well.

    Transfer to a serving dish and serve the Molisana-style pasta
