  • 1 bunch chopped parsley
  • 1 tbsp extra virgin olive oil
  • 1 pinch salt
  • as needed sunflower oil

  • Let’s start preparing the onion and zucchini fritters:

    Wash the zucchini, trim them, and slice them thinly with the mandoline.

    Peel the onions and slice them thinly with the mandoline

    Pour the flour and salt into a bowl

    Also add the extra virgin olive oil.

  • Slowly add thecold sparkling water or cold beer, mixing with a hand whisk to avoid lumps.

    Add the chopped parsley.

    Work everything until you get a smooth and homogeneous batter, add the sliced onions and the zucchini, mix.

    Heat plenty of seed oil in a pan, and,when it’s hot, fry the onion and zucchini fritters in spoonfuls.

  • Fry the fritters for 8 minutes, turning them continuously then when they are golden, drain them on absorbent paper.

    Serve the onion and zucchini fritters hot and freshly fried.
