Orange Soup, is a typical dish of the Apulian peasant tradition, pure poetry. A very simple dish prepared with oranges, salt, pepper, water, parsley, tomatoes, and toasted bread. Bread was always available at home and even when stale it was toasted and used for soups, my comfort food.
The orange soup is very similar to Cialledda with the base of cialledda always being the stale bread, slightly soaked to soften it and then seasoned with fresh tomatoes, olive oil, salt, onion, oregano, basil…….a fresh, healthy and genuine dish.
We can also enjoy oranges in fennel and orange salad or in salad with salmon
But now let’s go to the kitchen and I’ll show you how to prepare the Orange Soup

- 2 blonde oranges
- 2 tomatoes
- parsley
- 1 glass water
- extra virgin olive oil
- salt
- pepper
- 3.5 oz stale bread

Steps
Let’s start preparing
Let’s start preparing the orange soup; pour the water into a small pot, add a drizzle of oil, parsley, and chopped tomatoes. Let it boil for a very few minutes.
Meanwhile, toast the bread pieces.
Take two oranges and peel them with a sharp knife.
In this way, you will only obtain the segments, removing the bitter white part.Pour the oranges into a bowl, add the water with tomatoes and parsley, and season with a drizzle of extra virgin olive oil, salt, and pepper.
Add the toasted bread, and our dish is ready to be served.Enjoy your meal!!
