It’s an ideal preparation for creating appetizers or finger foods, can be spread on canapés, or used as a pairing with meat dishes…. to dress pasta, risottos, gnocchi… A truly versatile recipe with an intense flavor, the preparation is easy to make even at the last minute.

Ingredients

- 1.05 cups whole milk
- 3.5 oz Parmesan Reggiano DOP
- 2 tbsp butter
- 3 tbsp all-purpose flour

Let’s start preparing the
To prepare the Parmesan cream, start by heating the milk in a saucepan. Meanwhile, in another saucepan, melt the butter over low heat. Once melted, add the flour.
Stir with a whisk to obtain a well-combined roux. Gradually add the previously heated milk, stirring well with the whisk.
Continue stirring and cook the mixture over low heat.
When the mixture has thickened, remove the saucepan from the heat and gradually add the grated Parmesan Reggiano, mixing it continuously with the hand whisk.
Mix the Parmesan well into the bechamel to achieve a rather thick consistency.
Your Parmesan cream is ready.
