- 4 red onions
- 12 oz pasta (tagliatelle or penne, spaghetti..)
- 1/2 cup dry white wine
- coarse salt
- extra virgin olive oil
- pepper
- cheese (grated)

Steps
Let’s start preparing
Let’s start preparing the pasta and onions; peel the onions, cut them into thin slices. Pour a drizzle of extra virgin olive oil into a frying pan and add the onions.
Cook for 35-40 minutes on a very low flame with a good pinch of coarse salt.
When they are nice and soft, raise the flame and deglaze with the wine.
Cook without a lid for 5 minutes.
Cook the pasta in plenty of salted water.Drain the pasta al dente and toss it in the frying pan, stirring a few times to distribute the sauce evenly
Finish with a sprinkle of pepper and cheese, mix well. Serve pasta and onions immediately.
