Pasta with spring onions and cherry tomatoes, a simple and tasty first course. The sauce is prepared with spring onions, sweet scallions widely used here in Apulia. ‘Sponsale‘ is a dialect term that indicates young, tender onion bulbs, not yet fully grown, with a very sweet flavor.

The spring onions are not leeks or scallions, but if you can’t find them in your area, substitute them with these.

  • 200 g pasta
  • 4 spring onions (or scallions)
  • 10 tomatoes (yellow and red)
  • salt
  • extra virgin olive oil

  • Let’s start preparing Pasta with spring onions and cherry tomatoes: clean the spring onions by removing the first layer, wash them and chop them finely.

    Wash, dry, and quarter the tomatoes.

    Pour a drizzle of extra virgin olive oil in a non-stick pan and sauté the spring onions and salt them.

    Add the tomatoes and cook for 5 minutes.

    Bring a pot of salted water to a boil and cook the pasta.
    Drain the pasta al dente and place it in the pan with the spring onions and cherry tomatoes

Quickly sauté the pasta, adding a little pasta cooking water if necessary.
