Pasta with zucchini and pancetta, a very creamy and tasty first course, without butter or cream. The recipe is very easy, it takes 15 minutes to prepare with a few ingredients. To bring this delicious dish to the table we first sauté the diced zucchini with garlic, keep some aside and blend the rest together with the grated cheese to obtain a very inviting pesto. We brown the pancetta, mix the ingredients to create a homogeneous sauce and use it to dress our pasta. Just combine everything and you’re ready to serve.

- 7 oz zucchini
- 2 cups pasta (dry)
- 3.5 oz smoked pancetta
- 1 clove garlic
- 4 tbsp grated Parmesan
- 1/2 glass white wine
- salt
- pepper
- extra virgin olive oil

Let’s start preparing the zucchini pasta; pour a drizzle of extra virgin olive oil into a frying pan and sauté the garlic.
Add the diced zucchini, season with salt and cook for about 10 minutes, stirring often.
Set aside a little of the zucchini and put the rest into a tall container, add the grated Parmesan and blend everything until you obtain a smooth pesto.
Cook the pasta in a pot of boiling salted water.
While the pasta cooks, in the same frying pan where you sautéed the zucchini cubes, gently brown the pancetta, stirring occasionally, then deglaze with the white wine and let it evaporate.
Add the blended zucchini to the pan with the pancetta, drain the pasta al dente, then pour it into the pan.
Mix everything well.
Serve your pasta with zucchini and pancetta.
