Pâte brisée

Pâte brisée, a basic recipe that is used to prepare savory pies but also desserts. It is indeed a neutral base, easy and quick to make, suitable for many recipes. The ingredients are few and simple, which we all have at home: we only need cold milk, extra virgin olive oil, flour, and salt. Pâte brisée is a light and crispy base with which to prepare delightful baked recipes even at the last minute!

Store the pâte brisée in the refrigerator, closed in an airtight container, for a couple of days. If you wish, you can freeze the dough in the freezer for about a month and defrost it as needed.

Ingredients

  • 9.5 oz all-purpose flour
  • 1/2 cup milk (cold)
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt

  • 1 Bowl
  • 1 Pastry board
  • 1 Kitchen scale

Steps

Let’s start preparing

  • Let’s start preparing the Pâte brisée, pour the all-purpose flour and salt into a bowl.

    Pour in the cold milk and extra virgin olive oil.

    Mix well with a spoon.

  • Transfer to a pastry board and work the dough until you obtain a smooth and homogeneous ball that doesn’t stick to your hands.
    At this point, the pâte brisée is ready; we can use it to prepare wonderful savory or sweet pies.

    Since it’s butter-free, the pâte brisée can be used immediately and does not need to rest in the fridge covered by plastic wrap.
    You can then roll it out with a rolling pin and use it!
