Pavesini cake with coffee, are light single-serving treats that require no baking, perfect to serve at the end of a meal or enjoy as a snack with a cup of coffee. Ideal to make conveniently in advance, and unmold when guests arrive, they are prepared in just a few minutes and with few ingredients.
To prepare them, just line the rim and bottom of the appropriate individual molds with pavesini, cut to size and quickly dipped in milk and coffee, and pour the coffee cream inside.

Ingredients

- 5.3 oz pavesini
- 1/2 cup milk
- 1 coffee cup coffee
- 7 oz mascarpone
- 3.5 oz whipping cream
- 1 cup coffee
- 2 tbsps powdered sugar
- to taste unsweetened cocoa powder

Let’s start preparing the pavesini cake: put the mascarpone, coffee, and powdered sugar in a bowl and mix with a spatula.
Whip the cream and gently fold it into the mascarpone and powdered sugar mixture with delicate movements from bottom to top to avoid deflating the cream.
The coffee cream is already ready we can proceed to prepare the cakes.
On a plate, mix milk and coffee.
Break the pavesini in half and quickly dip them.
Line a muffin mold (disposable) with plastic wrap . Line the bottom and edges of the appropriate single-serving molds with the pavesini.
Pour the coffee cream inside the cookie shell and cover with the pavesini dipped in milk
Seal the cakes well with plastic wrap and let them firm up in the fridge for at least 30 minutes.
Remove the cakes from the fridge and invert them onto a plate, removing the plastic wrap.
Dust the pavesini cake with coffee with unsweetened cocoa powder.
