PURCIDD OR STRUFFOLI – CHRISTMAS SWEETS, a Christmas dessert from Puglia. PURCIDD are very similar to Neapolitan struffoli. The dough is prepared with 00 flour, re-milled semolina flour, white wine, and extra virgin olive oil. I love Purcidd as they remind me of my grandmother Angela during Christmas when she would prepare many, and the scent of honey and cinnamon filled the house. It was the smell of Christmas made of simple things and lots of love for family and for us grandchildren.

- 6.8 oz white wine
- to taste honey
- to taste Ground cinnamon
- to taste Seed oil
- to taste almonds

Let’s start preparing
PURCIDD OR STRUFFOLI – CHRISTMAS SWEETS
Let’s start preparing the purcidd,pour the flour on the worktable and form the classic fountain in the center.
Slowly pour the liquid ingredients and knead.
Now with the dough, form long strips and cut them into small pieces, using slight pressure with your thumb to drag them on the gnocchi board or the tines of a fork to get the classic shape very similar to gnocchi
Put plenty of seed oil in a pan when it’s hot, immerse the PURCIDD with a slotted spoon, to avoid lowering the oil temperature, cook a few purcidd at a time.
Stir with the slotted spoon for even cooking; 3 minutes are enough.
.Drain them and transfer them to a tray lined with paper towels to absorb excess oil and let them cool.
Now put the honey to heat in a pot and once hot and liquid, pour the Purcidd, almonds, and a generous sprinkle of cinnamon.
Mix well and place them on a serving plate and serve
