  • 1 2/3 cups all-purpose flour
  • 1 egg
  • 1/2 cup plain yogurt
  • 1 sachet instant baking powder for savory preparations
  • 2 tbsp extra virgin olive oil
  • salt
  • 2/3 cup water
  • 1 zucchini (or two small)
  • 3 oz cheese (sliced, like provola)

  • Let’s start preparing the quick focaccia. First of all, take the zucchini, wash them, trim the ends and grate them into julienne.

    Pour into a bowl the yogurt, extra virgin olive oil, the egg, the baking powder, the flour and the water, and mix everything together.

    Stir until you obtain a lump-free mixture.

  • Butter and flour a square pan about 8 2/3 in, pour half of the batter and cover with the cheese slices and the julienned zucchini. Cover everything with the remaining batter, leveling with a spoon.

    Bake in a preheated oven at 356°F for 30-35 minutes.
