Shortcrust pastry

Shortcrust pastry, a basic recipe used to prepare savory tarts but also sweet ones. It is a neutral base, easy and quick to make, suitable for making many different recipes. The ingredients are few and simple and are usually already in the kitchen: we will need only cold milk, extra virgin olive oil, flour and salt. Shortcrust pastry is a light and flaky base with which you can prepare delightful baked dishes, even at the last minute!

Store the shortcrust pastry in the refrigerator in an airtight container for a couple of days. If you wish, you can freeze the dough ball in the freezer for about a month and thaw it when needed.

But now let’s go to the kitchen and I’ll show you how to prepare the shortcrust pastry

Ingredients

LET’S SEE WHAT WE NEED TO PREPARE

  • 2 1/6 cups type 0 flour (all-purpose)
  • 1/2 cup + 1 tbsp cup milk (cold)
  • 4 tbsp extra virgin olive oil
  • 1/2 tsp salt

Tools

  • 1 Bowl
  • 1 Dough board
  • 1 Kitchen scale

Steps

Let’s start preparing

  • Let’s start preparing the shortcrust pastry: pour the type 0 flour and the salt into a bowl.

    Pour in the cold milk and the extra virgin olive oil.

    Stir well with a spoon.

  • Move to a dough board and work the dough until you obtain a smooth, homogeneous ball that does not stick to your hands.
    At this point the shortcrust pastry is ready; you can use it to make wonderful savory or sweet tarts.

    Because it is butter-free, the shortcrust pastry can be used immediately and does not need to rest in the refrigerator covered with plastic wrap.
    You can then roll it out with a rolling pin and use it!
