Spinach omelette, a simple and tasty main course, easy and quick to prepare. Just a few simple steps: once boiled, the spinach is drained, roughly chopped, and then mixed with beaten eggs with grated cheese, salt, and pepper. Finally, the mixture is cooked in a pan with a drizzle of extra virgin olive oil. To make the omelette more delicious, we can add some cubes of mozzarella, provola, or cooked ham….The spinach omelette is a perfect solution for dinner and can also be enjoyed outside the home, for a work lunch break or a picnic.

Ingredients

  • 6 eggs
  • 10.5 oz spinach
  • 1.5 oz cheese (grated)
  • salt
  • pepper
  • extra virgin olive oil

Steps

Let’s start preparing

  • Let’s start preparing the omelette: clean the spinach, wash and drain them, and steam for just under 10 minutes. Drain them again, let them cool slightly, and squeeze them.

    Meanwhile, crack the eggs into a bowl and beat them with a fork, adding a pinch of salt, a grind of pepper.

  • Add the grated cheese, mix, then add the spinach and combine.

    Grease a 8-inch pan with a bit of extra virgin olive oil.

    When it is very hot, pour in the egg mixture: cook the omelette for 4/5 minutes, then turn it over with the help of a plate or lid and cook on the other side as well.

  • Transfer the ready omelette to a serving plate and enjoy it hot or cold.
