In this frittata, you’ll find a wide variety of vegetables cooked in a pan such as carrots, wild asparagus, peppers.… We can serve the frittata as an appetizer or as a main dish with a nice salad. Spring Frittata is a light dish that is easy and quick to prepare. Prepared only with eggs and vegetables, which you can choose seasonally or your favorites.

  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 bunch wild asparagus
  • 1 carrot
  • 1 leek
  • 1 bunch chopped parsley
  • 3 eggs
  • 2 tablespoons cheese
  • to taste salt
  • 1 pinch pepper
  • to taste extra virgin olive oil
  • 1.4 oz frozen peas

Steps

Let’s start preparing the

  • Let’s start preparing the spring frittata: wash and clean all the vegetables and slice them into thin strips. Sauté them in a pan with a drizzle of oil for about 6 minutes over low heat, stirring frequently, and adjust the salt.

    Meanwhile, take a bowl and beat the eggs with salt and grated cheese.

  • Once the vegetables are ready, turn off the heat and add them to the beaten eggs, mix well with a spoon

    Pour everything into a non-stick pan with a diameter of 10 inches and cook covered with a lid for 7 minutes over moderate heat. With the help of the lid, flip the frittata to cook the other side for about 3 minutes

    Once ready, turn off the heat and serve your spring frittata.
