Sticky Potatoes with Onion, a typical side dish from Calabria, specifically from the city of Cosenza. These potatoes get their name from the fact that, once cooked, they stick together ‘mpacchiuse. To make this dish, you need to choose yellow-fleshed potatoes, preferably from Sila. The original recipe calls for cooking them in an iron pot but we made do with a good non-stick pan with a lid.

- 1.1 lbs potatoes (yellow-fleshed)
- 3 Tropea red onions
- extra virgin olive oil
- salt

Let’s start preparing
Let’s start preparing the Sticky Potatoes, wash the potatoes, peel them, and cut them into slices about 1/8 inch, and let them soak in cold water to remove excess starch. Peel the Tropea onions and slice them to the same thickness as the potatoes.
Pour the extra virgin olive oil into a pan, let it heat up, then add the potatoes. Season with salt
Cover with the lid and cook for 8 minutes, without ever stirring or moving the pan. After the indicated time, add the onions and cover again with the lid. Cook for another 15-20 minutes, shaking the pan occasionally to prevent them from sticking to the bottom. Then remove the lid, salt, and continue cooking, turning them as little as possible until cooked
Once cooked, remove the potatoes with a slotted spoon and transfer them to a serving dish.
Serve the Sticky Potatoes with Onion while still hot.
