The dough is very easy to make: it is prepared with eggs, flour, sugar and seed oil, baking powder, lemon juice and grated zest, and diced strawberries.

- 1 1/4 cups all-purpose flour
- 2/3 cup potato starch
- 2 tsp baking powder
- 1 egg
- 1/4 cup lemon juice
- 1 lemon zest (grated)
- 3 tbsp + 1 tsp tbsp vegetable oil
- 2/3 cup strawberries (trimmed weight)
- 6 tbsp + 1 tsp tbsp granulated sugar

Let’s start preparing the strawberry cookies: put the egg, the sugar, the vegetable oil, the grated lemon zest and the lemon juice into a bowl and mix all the ingredients until you obtain a smooth, homogeneous mixture.
Add the flour and the baking powder and mix well until you obtain a well combined dough.
Wash the strawberries and remove the stems. Dice the strawberries and fold them into the cookie dough.
Stir with a spoon so that the strawberries are evenly distributed in the dough.Take a baking sheet lined with parchment paper and, using two spoons, shape the cookies and place them well spaced apart.
Bake the cookies in a preheated conventional oven at 356°F for 15 minutes.
Remove from the oven, let them cool slightly, and then enjoy the strawberry cookies
