Stuffed pita cooked in a pan, a quick and tasty dinner-saver. Perfect for when we have little time but don’t want to give up a delicious meal.
The dough for the stuffed pita contains flour, water, salt, olive oil, and a teaspoon of baking powder. Just mix the ingredients first in a bowl and then knead by hand. Once the dough is ready, divide it into two portions and roll each portion by hand into a thin disk. Then simply fill and cook for a few minutes in a pan and your pita is ready to enjoy!

- 3/4 cup all-purpose flour (about 100 g / 3.5 oz)
- 3 tbsp + 1 tsp water (50 ml)
- 4 tablespoons extra virgin olive oil
- 1 teaspoon instant baking powder (for savory preparations)
- 1/2 teaspoon salt
- 2 slices cooked ham
- 2 slices scamorza cheese (sliced)
- to taste tomato purée

Let’s start preparing the Stuffed pita cooked in a pan: mix the flour, water, oil, salt and baking powder in a bowl, then work everything until you obtain a smooth, homogeneous dough. Divide the dough into two pieces and roll each portion into a thin disk.
Fill the disk with tomato purée, the slices of cooked ham and the scamorza cheese.
Close the pita by folding the edges of the disks toward the center and press to seal the closure points.
Heat a non-stick pan with a drizzle of extra virgin olive oil
Cook the pita for about 3 minutes on each side, pressing lightly with a spatula.
Serve the pita hot and crispy.
