- 1 cup all-purpose flour (00-style)
- 1 egg
- 2 tbsp + 1 tsp granulated sugar
- 2 tsp extra virgin olive oil
- 1/3 cup + 1 tbsp milk
- 1 pinch baking soda
- vegetable oil (for frying)
- granulated sugar (for coating)

Let’s start preparing the
Start preparing the Sweet Scrippelle: crack an egg into a bowl and add a pinch of salt.
Add the sugar, the extra virgin olive oil, the milk and mix with a whisk. Add the 00 flour (all-purpose) and a pinch of baking soda, and whisk until you obtain a smooth, lump-free batter.
Heat vegetable oil in a nonstick pan and use a ladle to form the little fritters. Cook the scrippelle about 2 minutes per side.
Toss the scrippelle, still hot, in granulated sugar and serve immediately.
The sweet scrippelle should be enjoyed right after cooking.
