- 1 1/3 cups cherry tomatoes
- 1/2 red onion (or Tropea)
- 1/2 cup all-purpose flour
- salt
- basil
- sunflower oil

Steps
Let’s start preparing
Let’s begin preparing the tomato fritters; wash the cherry tomatoes and clean the onion and basil.
Cut the tomatoes and onion into small pieces and tear the basil with your hands.
Put all the vegetables into a bowl, add salt and mix everything together.
Add the flour and combine until you obtain a homogeneous mixture.
Adjust the amount of flour depending on the water the tomatoes will release.
Heat the oil in the pan, and with a spoon scoop small portions and transfer them to the pan.
Flatten the mixture to form small fritters and cook them for about 3-4 minutes.
When a crust has formed, turn the fritters and continue cooking on the other side.
You can also bake the fritters in the oven at 356°F for 15-20 minutes or cook them in an air fryer also at 356°F.
