  • 2 zucchini
  • 2 carrots
  • 1.76 oz pine nuts
  • salt
  • pepper
  • extra virgin olive oil
  • thyme

Steps

Let’s start preparing

  • Let’s start preparing Venus rice with carrots and zucchini; begin with cooking the rice: fill a pot with plenty of water and bring it to a boil, pour in the rice, salt and cook for about 15 minutes.
    Follow the cooking instructions on the Venus rice package

    Cut the zucchini and carrots into small cubes. .
    Pour a drizzle of extra virgin olive oil into a pan and sauté the cut vegetables over low heat, also add thyme, salt, and pepper.

    Drain the rice once cooked, add it to the vegetables also add the pine nuts and sauté everything together for a few minutes.
