Let’s start preparing the wine dough for savory pies: pour the dry white wine and the extra virgin olive oil into a bowl. Use a whisk to emulsify the ingredients for 2 minutes.
Add the type 0 flour and a pinch of salt and mix everything, first in the bowl and then, when the dough has come together, continue on a floured work surface until you obtain a smooth, homogeneous dough ball.
Now our dough is ready; you can roll it out immediately or let it rest for 10 minutes in the fridge.
The wine dough can also be prepared in advance and kept in the refrigerator for a few days.
