The chicken with olives and cherry tomatoes is a main dish made with chicken breast that is simple, light, and quick to prepare, but really delicious and very tasty.

This is one of those perfect dishes to prepare during the week or for quick dinners: in fact, it can be made in a few minutes and with a few ingredients, just like creamy lemon chicken breast, chicken and potatoes in a pan, chicken bites with mint zucchini, chicken with eggplants and cherry tomatoes or chicken with pumpkin, speck, and walnuts.

For its preparation, I preferred to use green olives in brine because I liked the idea of giving a more pronounced flavor to this chicken-based main dish, but if you prefer, you can also use black olives or other types of olives you like, pitted or whole.

The chicken bites with olives and cherry tomatoes can also be prepared a bit in advance, for instance, before going to work: upon your return, you will just need to slightly warm them up with a spoonful of water, and they will be as if freshly made!

Ingredients to prepare chicken with cherry tomatoes and olives

  • 1.5 lbs chicken breast (whole or sliced)
  • 1 cup cherry tomatoes
  • 3.5 oz green olives in brine (or 2 oz of pitted green or black olives)
  • 2 tsps pickled capers (or salted)
  • 1 onion
  • 3 tbsps extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste all-purpose flour (for coating the chicken)

Steps to prepare chicken with olives and cherry tomatoes

Let’s see together how to prepare this delicious main dish made with chicken breast.

  • Cut the slices of chicken breast into strips 3/4-inch wide or into pieces of approximately the same size.

  • Once done, prepare a plate with a few tablespoons of all-purpose flour and coat well the chicken breast strips. Set aside.

  • Take a pan, preferably non-stick and with a heavy bottom, add some oil, and sauté the onion sliced thinly over medium heat.

    Shake off the excess flour from the chicken breast, shaking them lightly, and add it to the pan in the hot oil. Sauté it for a few minutes over high heat, stirring occasionally to promote even cooking.

  • When it starts to brown, add the cherry tomatoes cut into wedges, capers (rinsed and/or desalted if you use the salted ones), a pinch of salt and pepper.

    Continue cooking for 5-6 minutes, lowering the heat a bit and adding a few tablespoons of water if necessary. Cooking times are indicative, as it depends on the size and thickness of the chicken.

    Before turning off the heat, when both the chicken and cherry tomatoes are cooked, add the olives. Let it flavor, adjust the salt and pepper, and serve.

Storage and Tips

– The chicken with cherry tomatoes and olives can be prepared even a few hours in advance and even the day before. Once cooled, just store it in a closed container in the refrigerator. When ready to eat, just put it back in the pan with a few tablespoons of water and heat it for a few minutes over medium heat.

– If you have leftovers, store them in the fridge in a covered container and consume within 48 hours.

FAQ (Questions and Answers)

  • Do I need to use chicken breast slices?

    No, you can use either chicken breast slices cut into strips or the whole chicken breast (which is generally sold at a lower price than the sliced one). In the case of the whole chicken breast, cut it into cubes not too large and more or less of the same size and proceed according to the recipe.
    With the same seasoning, you can also use chicken drumsticks or thighs (which cost even less than chicken breast): in this case, however, keep in mind that the cooking times are longer. I recommend bringing the drumsticks and/or thighs almost to cooking and only in the last 10-15 minutes adding the seasoning to ensure the chicken gets flavored.

  • What kind of olives can I use?

    As already mentioned, you can use any type of olives, it depends on your taste. Black olives have a slightly more delicate flavor compared to green olives. You can also use whole olives or already pitted ones.

  • If I don’t like capers, can I omit them?

    Sure, you can reduce the amount or omit them entirely. In their place, to season the tomato, you can use other aromatic herbs like oregano, rosemary, basil, or parsley.
