- 7 oz chicken breast (sliced)
- 1 cup yellow bell pepper
- 1 cup red bell pepper
- 1 clove garlic
- 1 white onion
- 3 tbsps extra virgin olive oil

Steps to prepare the Venere Rice Salad with Chicken and Peppers
Let’s see together how to prepare this delicious cold dish based on Venere rice, chicken, and peppers.
Place the Venere rice in a colander and rinse it well under cold running water.
Cook it in salted water and drain it slightly al dente. Dress it with a drizzle of oil and set aside. In the meantime, prepare the seasoning.
Prepare a mince of onion and garlic. If you do not like garlic in the finished dish, leave it whole and remove it at the end of cooking.
Cut the peppers into pieces as well, after washing and removing the stalk and internal seeds.
Also cut the chicken breast into pieces. I recommend not making them too large to speed up cooking.
Take a heavy-bottomed skillet, pour the oil into it, and heat it. Add the chopped onion and garlic (or the whole garlic, if you prefer) and the chopped peppers to the pan. Sauté them over high heat for 5-6 minutes, then add the chicken breast pieces, salt, and pepper, and continue for a few more minutes until the chicken is perfectly cooked.
At the end of cooking, add the rice to the pan and let it absorb the seasoning. Finish with some chopped fresh basil leaves.

– You can also prepare the Venere rice salad in advance: in this case, just wait for it to cool, transfer it to a container, and store it in the refrigerator until you decide to consume it.
