- 2 1/2 cups all-purpose flour
- 1 cup almond flour
- 7 tbsp butter
- 1/2 cup sugar
- 1 vial lemon flavoring
- 1 tsp ground cinnamon
- 1 egg
- 1 Golden apple (about 200 grams)

Steps
To prepare the air fryer apple cookies, first add the all-purpose flour, sugar, almond flour (alternatively, you can blend whole almonds into a powder), the teaspoon of cinnamon, and the baking powder into a blender or food processor bowl. Turn on the mixer to combine the dry ingredients.
Next, add the cold butter from the fridge cut into pieces. Blend until you get a sandy mixture. Then add the egg and the lemon flavoring vial. Turn on the mixer again for a few seconds, just long enough to incorporate the egg. Transfer the mixture to a large bowl or work surface and knead to combine the ingredients. Do not worry if the dough is not very compact.
Wash the apple, peel it, remove the core, and cut it into small pieces. Add the apple to the dough and work with your hands: the moisture from the fruit will help make the mixture more compact.
Form balls with your hands, flatten them slightly, and place them in the air fryer basket (in my 6-liter fryer, 10 cookies fit in). After preheating the fryer for a couple of minutes at 320°F (160°C), cook the cookies for 10 minutes. After this time, lower the temperature to 300°F (150°C) and continue cooking for another 5 minutes.
Once ready, remove the cookies and let them cool on a rack. If desired, you can dust them with powdered sugar.

You can store the cookies in an airtight container at room temperature for 3-4 days.
