Ingredients
- 2 red peppers (medium size)
- to taste salt
- to taste extra virgin olive oil
- Half clove garlic
- 1 bunch parsley

Steps
To prepare the air fryer baked peppers, wash the peppers, dry them carefully, and remove the cap, divide the peppers into two parts, and remove the white filaments and seeds.
Preheat the air fryer to 375°F for a couple of minutes and then place the peppers in the basket with the skin facing up. Cook for 15/20 minutes at 375°F without turning them halfway through.
Transfer the peppers to a bowl, let them cool slightly, and proceed to remove the skin. Cut the peppers into strips and place them in a bowl. Add a couple of pinches of salt, chopped parsley, garlic, a generous drizzle of extra virgin olive oil, and mix well to combine all the ingredients.
In a tray suitable for your air fryer (in my case I lined the basket with parchment paper), place the seasoned peppers and generously sprinkle with breadcrumbs, give a spray of oil (alternatively a thin drizzle of oil) and cook at 350°F for 8/10 minutes to allow the bread to brown.
Your baked peppers are ready to be served, enjoy your meal!
Storage
Air fryer baked peppers can be stored in the fridge for a couple of days in an airtight container. You can enjoy them either cold or hot.
