Ingredients
- 21 oz eggplants
- 7 oz cherry tomatoes
- 1 clove garlic
- salt
- extra virgin olive oil

Steps
To prepare air fryer eggplant cubes, wash the eggplants, cut off the ends, dry them thoroughly and cut them into chunks.
Take a bowl and add the eggplants, season with 4-5 tablespoons of extra virgin olive oil (or to taste), salt to taste, and mix well.
Place the eggplant chunks in the air fryer basket and cook at 350°F for about 15 minutes (shake the basket often). To check if the eggplants are cooked, use a fork, if it penetrates easily the cooking is done, otherwise, let them cook for a few more minutes. If during cooking you notice that the eggplants have absorbed enough oil, give a few sprays of oil with a spray bottle.
