To make the air fryer potato puffs, first wash the potatoes and place them in a pot, covering them with plenty of water. Once the water boils, let them cook for about 30/40 minutes or until a fork easily pierces them.
Meanwhile, place a pot on the stove and pour in the water, add a couple of pinches of salt, the knob of butter, and bring to a boil. When the mixture starts boiling, add the previously sifted flour, stir quickly and vigorously with a wooden spoon to prevent lumps. Cook everything on low heat for about 3/4 minutes, stirring frequently, then turn off the heat.
Drain the potatoes, and while still hot, peel them and mash them directly into the pot with the flour mixture, stirring to combine everything. Then incorporate one egg at a time, stirring vigorously with a wooden spoon. Add the next egg only when the previous one has been well absorbed by the dough.
On a cutting board, with the help of a knife, cut the seasoned sausage into small cubes, add them to the mixture, and stir to combine everything.
When the mixture is well combined, use two spoons to form the potato puffs. Create small mounds (which you will brush with extra virgin olive oil) and place them inside the air fryer basket lined with perforated parchment paper (lightly greased).
Cook the potato puffs in the air fryer at 356°F for 12/14 minutes.
