  • Cooking methods: Air Frying
  • Cuisine: Italian

Ingredients

  • 2 cups all-purpose flour
  • 3/8 cup granulated sugar
  • 7 tbsp butter
  • 1 egg
  • 1 grated lemon zest (untreated)
  • as needed strawberry jam (suitable for tarts)
  • 1 pinch salt

Tools

  • 1 Air Fryer
  • 1 Tart Pan

Steps

To prepare the air fryer tart, start with the shortcrust pastry. In a food processor, add the flour, sugar, pinch of salt, and cold butter cut into cubes. Pulse until you get a sandy mixture.

Then add the egg and the grated lemon zest and pulse again to absorb the egg. Pour the mixture into a bowl and knead until you get a smooth and homogeneous dough. Wrap in plastic wrap and let it rest in the refrigerator for at least half an hour.

After the resting time, take the shortcrust pastry out of the fridge and roll it out with a rolling pin on a slightly floured surface. Create a circle slightly larger than the mold you’ll be using for your air fryer.

Transfer the shortcrust pastry into the tart pan (8 inches) and save some pastry for decorations. Pour the strawberry jam (you can use any other type of jam) and spread it evenly over the base. With the pastry you set aside, create strips and garnish the tart.

Place the pan in the air fryer basket and cook at 320°F for 20/25 minutes. Check occasionally to ensure the surface doesn’t burn; if necessary, lower the temperature. The temperature and cooking time may vary depending on the type of air fryer.

Once your air fryer tart is cooked, let it cool before removing it from the pan. If you like, sprinkle with powdered sugar.

Storage

The air fryer tart can be stored for 2-3 days at room temperature in an airtight container.

You can get creative with the filling, just make sure the jam you use is suitable for tarts. You can substitute the grated lemon zest with vanilla flavoring.
