Ingredients
- 1.1 lbs zucchini
- to taste extra virgin olive oil
- 3 slices cooked ham
- to taste provola cheese
- to taste salt

Steps
To prepare the air fryer zucchini rolls, wash the zucchini, cut off the ends, and dry them carefully. Slice the zucchini with a mandoline to a thickness of about 3/16 inch and brush both sides with extra virgin olive oil. You can use a brush or an oil sprayer.
Layer the zucchini slices in the air fryer basket and cook at 338°F for about 12 minutes, turning halfway through. Once done, lightly salt the zucchini and let them cool.
To prepare the rolls, place a slice of cooked ham and a slice of provola on each zucchini slice. Roll them up and place seam side down in the air fryer basket. Alternatively, you can secure the closure with a toothpick.
Cook at 329°F for 5-7 minutes or until the provola melts. The zucchini rolls are ready to be enjoyed.
Storage
Air fryer zucchini rolls can be stored in the fridge for 2-3 days in an airtight container. Before consuming, I recommend reheating them for a few minutes.
