To prepare the apple and almond muffins in an air fryer, break the eggs (they must be at room temperature) into a bowl, add the sugar, and start whipping at maximum speed with the electric beaters. When the mixture is pale and frothy, add the oil slowly. Then, while continuing to mix, add the yogurt, the grated lemon zest, and less than half of the almond flavoring vial.
Sift the flour with the baking powder in another bowl, add the almond flour (if you don’t have almond flour, you can blend whole almonds into powder) and mix to combine the dry ingredients. Gradually add everything to the mixture while continuing to mix.
Wash the apples, peel them, cut them into pieces, and finally add half to the batter, stirring with a spatula or spoon. Take the aluminum molds, butter and flour them, and then fill them with 3/4 of the batter. Alternatively, you can line the aluminum molds with paper cases.
Decorate the muffins with the remaining apple pieces by inserting them into the batter; if you like, you can add almond slices or whole almonds. Place the molds in the air fryer’s basket (in my case, a 6-liter capacity fryer was used) and bake at 329°F for 12 minutes, then lower the temperature to 311°F and bake for another 4 minutes.
To ensure they are cooked, do the toothpick test: insert it into the center of the muffin and when you pull it out, it should come out dry. If necessary, extend the cooking for another 2-3 minutes at 311°F.
Once baked, cool the apple and almond muffins on a wire rack. Once cooled, you can enjoy them. If desired, you can dust them with powdered sugar.
