- 2 1/2 cups all-purpose flour
- 1 cup almond flour
- 7 tbsp butter
- 1/2 cup granulated sugar
- 1 vial lemon flavor

- 1 Golden apple (about 200 grams)
- 1 tsp baking powder
Steps
To make the apple and cinnamon cookies, start by placing the all-purpose flour, sugar, almond flour (alternatively, you can finely chop whole almonds), ground cinnamon, and baking powder in the bowl of a mixer (or food processor). Turn on the mixer to mix all the dry ingredients.
Next, add the cold butter cut into cubes. Blend until you get a sandy consistency. Then incorporate the egg and lemon flavor, and turn on the mixer again for a few seconds, just long enough to absorb the egg. Transfer the mixture to a work surface or a large bowl and knead briefly to compact everything. Don’t worry if the dough still seems a bit loose.
Peel the apple, remove the core, cut it into small pieces, and add it to the dough. Work the mixture with your hands: the moisture from the apple will help make it more homogeneous.
