Ingredients
- 3 eggs
- 4.23 oz granulated sugar
- 3.17 oz sunflower oil
- 0.5 cup plain yogurt
- 1 lemon flavoring vial
- 9.52 oz all-purpose flour
- 2.82 tsp baking powder
- 1/2 tsp ground cinnamon
- 2 Golden apples

Steps
To prepare the apple and cinnamon muffins, break the eggs into a bowl, add the sugar, and start beating at the highest speed with the electric whisks. When the mixture is light and frothy, add the oil in a slow stream. Then, while continuing to mix, incorporate the yogurt, lemon flavoring, and cinnamon.
Sift the flour with the baking powder and gradually add it to the mixture while continuing to mix.
Wash the apples, peel them, cut them into pieces, and finally add half of them to the batter, stirring with a spatula or spoon. Take the 12-muffin pan, place the paper liners, and fill them with 3/4 of the batter. Alternatively, if you don’t have the pan, you can use aluminum liners.
Decorate the muffins with the remaining apple pieces by inserting them into the batter. Bake in a static oven at 356°F for about 20/25 minutes, or in a convection oven at 338°F for the same time.
To ensure they are cooked, perform the toothpick test: insert it into the center of the muffin, and if it comes out dry, they are done. If necessary, extend the baking time by another 2-3 minutes.
Once baked, remove the muffins from the oven and let them cool on a rack. When they are cool, you can enjoy them. If you wish, you can dust them with powdered sugar.
Storage
Apple and cinnamon muffins can be stored for 3/4 days in an airtight container.
