The apple and cinnamon muffins in an air fryer are very good and soft desserts, simple to prepare, and can be a great choice for breakfast or snacks for adults and children. This muffin recipe requires few ingredients and in less than 30 minutes you will have delicious pastries ready.

Ingredients
- 3 eggs
- 4.2 oz granulated sugar
- 3.2 oz sunflower oil
- 0.5 cup plain yogurt
- 1 lemon flavor vial
- 9.5 oz all-purpose flour
- 2 tsp baking powder
- Half teaspoon ground cinnamon
- 2 Golden apples

Steps
To prepare the apple and cinnamon muffins in an air fryer, crack the eggs (they should be at room temperature) into a bowl, add the sugar, and start whisking at maximum speed with an electric mixer. When the mixture is light and frothy, slowly add the oil. Then, while continuing to mix, incorporate the yogurt, lemon flavor, and cinnamon.
Sift the flour with the baking powder and gradually add it to the mixture while continuing to mix.
Wash the apples, peel them, cut them into pieces, and finally add half of them to the batter, mixing with a spatula or spoon. Take the aluminum molds, butter and flour them, and then fill them with 3/4 of the batter. Alternatively, you can line the aluminum molds with paper cups.
Decorate the muffins with the remaining apple pieces by inserting them into the batter. Place the molds in the basket of the air fryer (in my case, a 6-liter capacity air fryer was used) and cook at 340°F for 12 minutes, then lower the temperature to 320°F and cook for another 4 minutes.
To ensure they are cooked, do the toothpick test: insert it into the center of the muffin and when you pull it out, it should come out dry. If necessary, extend the cooking time for another 2-3 minutes at 320°F.
Once cooked, remove the muffins and let them cool on a wire rack. When they have cooled, you can enjoy them. If desired, you can dust them with powdered sugar.
Storage
The apple and cinnamon muffins can be stored for 3/4 days in an airtight container.
