Apple and Walnut Cookies

Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 cup walnut crumbs
  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1 Golden apple (about 7 oz)
  • 1 teaspoon baking powder

Steps

To make the apple and walnut cookies, start by pouring into the bowl of a mixer (or a food processor) the all-purpose flour, sugar, walnut crumbs (alternatively, you can chop the walnuts), ground cinnamon, and baking powder. Turn on the mixer to mix all the dry ingredients.

At this point, add the cold butter cut into cubes. Blend until you get a sandy consistency. Then incorporate the egg and vanilla extract, then turn on the mixer again for a few seconds, just long enough to absorb the egg. Transfer the mixture to a pastry board or a large bowl and knead briefly to compact everything. Don’t worry if the dough is still a little loose.

Peel the apple, remove the core, cut it into small pieces and add it to the dough. Work the mixture with your hands: the moisture of the apple will help make it more homogeneous.

With your hands, form balls, flatten them slightly, and place them on a baking tray lined with parchment paper. Bake in a preheated static oven at 350°F for 20/25 minutes.

Once baking is complete, remove them from the oven and let them cool on a wire rack. If you like, you can sprinkle them with a little powdered sugar.

The cookies can be stored for 3-4 days in an airtight container at room temperature.
