Ingredients

  • 2.15 cups all-purpose flour (w 260)
  • 1/8 cup granulated sugar
  • 1/2 cup milk
  • 0.28 oz fresh yeast
  • 1 egg
  • 1.76 tbsp butter
  • 1 pinch salt
  • 1/2 tbsp ground cinnamon
  • 1/2 vial vanilla flavor
  • 1 apple

Steps

To prepare apple swirls, start by pouring the flour, half a teaspoon of cinnamon, and sugar into a bowl and mix the dry ingredients. Add the yeast by crumbling it with your hands directly into the flour. Add the milk and softened butter at room temperature, the vanilla flavor, the egg, and a pinch of salt. Mix well until you get a smooth and homogeneous dough. Cover the bowl with plastic wrap and let it rise until doubled in volume: it will take about 4-5 hours.

Once the dough has risen, transfer it onto a sheet of parchment paper and roll it out with a rolling pin to form a rectangle about 15.75 x 11.8 inches. Then, wash the apples, peel them, remove the core, and cut them into not too large cubes or, if you prefer, thin slices.

Distribute the chopped apples and chocolate chips evenly over the entire dough surface, then roll it up using the parchment paper. With a sharp knife, cut the roll to obtain about 10 swirls, place them in a baking tray lined with parchment paper, and let them rise for about 20 minutes.

After the rising time, bake in a preheated oven at 356°F for 20-25 minutes.

Your swirls are ready to be served with a dusting of powdered sugar.

Storage

Apple swirls can be stored at room temperature in an airtight container for 2-3 days.

If you have more time, you can reduce the amount of fresh yeast from 0.28 oz to 0.07 oz and let the dough rise in the refrigerator for at least 12 hours. Take it out a couple of hours before working it, then proceed with rolling and forming the swirls.
