Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 cup chopped walnuts
  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1 Golden apple
  • 1 teaspoon baking powder
  • 1/4 cup dark chocolate chips

Steps

To make the apple, walnut, and chocolate cookies, start by placing the all-purpose flour, chopped walnuts (alternatively, you can chop whole walnuts), sugar, ground cinnamon, and baking powder into a food processor. Turn on the processor to mix all the dry ingredients.

Add the cold butter cut into cubes. Blend until you get a sandy texture. Then incorporate the egg and vanilla extract, then turn on the processor again for a few seconds, just long enough to absorb the egg. Transfer the mixture to a work surface or a large bowl and knead briefly to bring it all together. Don’t worry if the dough is still a bit loose.

Peel the apple, remove the core, chop it into small pieces, and add it to the dough. Work the mixture with your hands: the moisture from the apple will help to make it more homogeneous. Then add the chocolate chips and continue to mix to distribute them inside the dough.

Form balls with your hands, flatten them slightly, and place them on a baking tray lined with parchment paper. Bake in a preheated static oven at 350°F for 20/25 minutes.

Once baked, remove them from the oven and let them cool on a wire rack. If you like, you can sprinkle them with a little powdered sugar.
