Chicken Rings in Air Fryer

Ingredients

  • 7 oz chicken (minced)
  • 1 carrot (about 2 oz)
  • 1 zucchini (about 3.5 oz)
  • 1.4 oz mortadella
  • 0.4 oz grated Parmesan cheese
  • 1 egg
  • a quarter of onion
  • to taste salt
  • to taste breadcrumbs
  • 1 egg (optional)

Steps for Chicken Rings in Air Fryer

First, focus on cleaning the vegetables: wash the zucchini, dry with a paper towel, remove the ends, and cut into chunks. Wash the carrots, peel them, dry them, remove the ends, and cut into cubes.

Place the carrots, zucchinis, mortadella, and onion in a mixer (or food processor) and chop everything. In a bowl, add the minced chicken, chopped vegetables, a couple of pinches of salt, grated Parmesan cheese, and the egg. Mix everything to distribute the ingredients evenly. If the mixture is not very compact, add some breadcrumbs (or bread crumbs).

Divide the mixture into four equal parts and form rings. Dip them one at a time in beaten egg and then in breadcrumbs, making sure to distribute it evenly.

Place the chicken rings in the air fryer’s basket lined with perforated parchment paper and drizzle them with a thin stream of oil or alternatively, you can spray the oil with the appropriate sprayer.

Cook at 356°F for 15 minutes until the rings are golden and crispy. Halfway through cooking, gently turn them over and spray a little more oil.

Storage and Tips

You can store the chicken rings in the air fryer in the refrigerator for up to one day. Before consuming them, reheat them in the fryer for a couple of minutes.
