- 1.75 lbs sliced chicken breast
- 3.5 oz cooked ham
- 2 sprigs rosemary
- 1 clove garlic
- 1.5 tbsp extra virgin olive oil
- 1 knob butter
- Half glass white wine
- 1.75 oz Parmigiano Reggiano PDO (shaved)
Steps
To prepare the chicken rolls with cooked ham and parmesan, lay the chicken breast slices on a cutting board, lightly salt them, and lay the cooked ham on top, covering almost the entire surface of each slice. Finally, add the shaved Parmigiano Reggiano.
Roll up the rolls and seal them with kitchen twine to prevent them from opening during cooking (alternatively, you can use toothpicks). Insert a few rosemary leaves between the twine of each roll. In a pan, pour the oil, add the knob of butter, the garlic, and finally the chicken rolls and brown for a few minutes.
Cover the pan with a lid and cook the rolls on medium-low heat for about 20-25 minutes. Halfway through cooking, remove the lid to let it dry a little. Cooking time depends on the size of the rolls. Turn the rolls occasionally. After the necessary time, add half a glass of white wine and let it evaporate.
Once cooking is complete, place the rolls on a cutting board and slice them. Serve immediately, accompanied by the sauce formed during cooking.
Storage
Chicken rolls with cooked ham and parmesan can be stored in the refrigerator for up to 2 days in a well-sealed glass container. Before consuming, it is recommended to reheat them in the oven for a few minutes.
