Ingredients
- 4 oz egg white
- 0.07 oz salt
- 0.6 cup granulated sugar
- 0.67 cup powdered sugar
- 1 pod vanilla
- 1 grated lemon zest
- 3.75 cups shredded coconut
Tools
- 1 Spatula
- 1 Mixer
- 1 Parchment Paper
Steps
The first step to making coconut cookies in the air fryer is to pour the egg whites into a bowl and start whipping them at maximum speed with an electric mixer or a stand mixer with a whisk attachment.
When the egg whites start to rise, but are not yet at stiff peaks, lower the speed and begin adding the granulated sugar little by little. Let it whip for a few minutes, then proceed to add the powdered sugar.
Take the vanilla pod, place it on the cutting board, and with the tip of a knife, slit the top and continue lengthwise. Then open the pod in half, without dividing the two halves, and with the tip of the knife or a teaspoon, scrape away the seeds and add them to the mixture. At the end of this operation, you should obtain a creamy mixture.
Now, get a container and pour in the vanilla egg white cream, add the salt, grated lemon zest, and shredded coconut, and start mixing with a spatula. It’s advisable to use a silicone spatula. Meanwhile, preheat the air fryer to a temperature of 350°F
When the mixture is well combined, with the help of two tablespoons, start forming the coconut cookies. Create small heaps and place them inside the air fryer basket lined with perforated parchment paper.
Cook the coconut cookies in the air fryer at 350°F for 8-10 minutes. Once the necessary time has passed, remove them and let them cool on a rack. Once cooled, you can enjoy them, and if you prefer, you can dust them with powdered sugar.
Storage and Tips
Coconut cookies in the air fryer can be stored for 3-4 days in an airtight container.
To make these cookies even more delicious, you can dip the bottom in chocolate previously melted in a double boiler and create decorations by drizzling with the tines of a fork the melted chocolate.
