Coconut Muffins with Chocolate Chips

Ingredients

  • 2 eggs
  • 1/3 cup sunflower oil
  • 1 3/4 cups all-purpose flour
  • 1 1/3 cups coconut flour (grated coconut)
  • 1/2 cup plain natural yogurt
  • 2 tsp baking powder
  • 1/4 cup dark chocolate chips
  • Half vial almond flavor
  • 1/2 cup granulated sugar

Steps

To prepare the coconut muffins with chocolate chips, break the eggs into a bowl, add the sugar, oil, plain yogurt, and half a vial of vanilla flavor. Mix everything with a whisk (alternatively, you can use a mixer) until you obtain a smooth and homogeneous mixture.

In another bowl, sift the flour together with the baking powder, add the grated coconut, and mix to combine the dry ingredients.

Add the dry ingredients and chocolate chips to the egg mixture and mix with the whisk to combine everything.

Take a 12-muffin tray, place the paper baking cups, and fill them with 3/4 of the batter. Alternatively, if you don’t have a tray, you can use aluminum baking cups.

If you prefer, you can decorate the muffins with a sprinkle of grated coconut. Bake in a static oven at 356°F for about 20/25 minutes, or in a fan oven at 338°F for the same time.

To ensure they are cooked, do the toothpick test by inserting it into the center of the muffin; it should come out dry. If needed, extend the baking time by another 2-3 minutes.

Once baked, remove the muffins and let them cool on a wire rack. When they have cooled, you can enjoy them. If desired, you can sprinkle them with powdered sugar.

Storage

Coconut muffins with chocolate chips can be stored for 3/4 days in an airtight container.
