Coconut Muffins with Chocolate Chips in an Air Fryer

Ingredients

  • 2 eggs
  • 3/8 cup cup sunflower oil
  • 1 3/4 cups cups all-purpose flour
  • 3/4 cup cup coconut flour (desiccated coconut)
  • 1/2 cup cup plain yogurt
  • 1 tbsp tbsp baking powder
  • 1/4 cup cup dark chocolate chips
  • Half vial almond flavor
  • 2/3 cup cup granulated sugar

Steps

To prepare the coconut muffins with chocolate chips in an air fryer, break the eggs into a bowl, add the sugar, oil, plain yogurt, and half a vial of almond flavor. Mix everything with a hand whisk (alternatively, you can use a beater) until you get a smooth and homogeneous mixture.

In another bowl, sift the flour together with the baking powder, add the desiccated coconut and mix to combine the dry ingredients.

Add the dry ingredients, chocolate chips, and mix with the whisk to combine everything.

Take aluminum molds, butter and flour them, then fill them with 3/4 of the batter. Alternatively, you can line the aluminum molds with paper liners.

Decorate the muffins with a sprinkle of desiccated coconut. Place the molds in the air fryer basket (in my case, an air fryer with a capacity of 6 liters was used) and cook at 329°F for 12 minutes, then lower the temperature to 311°F and cook for another 3-4 minutes.

To ensure they are cooked, do the toothpick test, insert it in the center of the muffin and when you pull it out, it should come out dry. If necessary, extend the cooking for another 2-3 minutes at 311°F.

Once cooked, let the coconut muffins with chocolate chips cool on a wire rack. Once cooled, you can enjoy them. If desired, you can dust them with powdered sugar.

Storage

The coconut muffins in an air fryer can be stored for 3-4 days in an airtight container.
